Summer is in full swing and what’s better than cooling off from the summer’s heat with a refreshing ice cold popsicle? One that is homemade, and packed with fruit, electrolytes, protein and collagen peptides!
I recently received Vital Protein’s melon mint beauty water (one of three varieties) and was dying to play around with it. Refreshing all on its own, but I was wondering how can I spruce this up. Alas, having just been to the farmer’s market, I was inspired by the fresh fruit and herbs. I grabbed some strawberries and mint and got to work!

Strawberry Coconut Protein Popsicles

Ingredients
1cupfresh (or frozen) strawberries
1cupcoconut water( I used Trader Joe's aloe coconut water)
1/4cupshredded unsweetened coconut(optional for more coconut flavor)
1scoopVital Proteins Melon Mint Beauty Water
4leavesfresh mintrinsed, dried and chopped

1cupfresh (or frozen) strawberries

1scoopVital Proteins Melon Mint Beauty Water
4leavesfresh mintrinsed, dried and chopped
Instructions
Place the first 4 ingredients in a blender and blend until smooth.
Stir in chopped mint leaves (you can also blend this in.)
Pour blended mixture into popsicle molds.
Place in freezer and allow to freeze for at least 6 hours.
Remove from mold and enjoy!
