Strawberry Coconut Protein Popsicles

Ingredients
  • 1cup fresh (or frozen) strawberries
  • 1cup coconut water( I used Trader Joe’s aloe coconut water)
  • 1/4cup shredded unsweetened coconut(optional for more coconut flavor)
  • 1scoop Vital Proteins Melon Mint Beauty Water
  • 4leaves fresh mintrinsed, dried and chopped
Instructions
  1. Place the first 4 ingredients in a blender and blend until smooth.
  2. Stir in chopped mint leaves (you can also blend this in.)
  3. Pour blended mixture into popsicle molds.
  4. Place in freezer and allow to freeze for at least 6 hours.
  5. Remove from mold and enjoy!
