Fish foil packet dinner

Ingredients
  • 4fillets dover sole(thawed, if frozen)
  • 1/2bunch asparagus
  • 1cup broccoli
  • 1tbsp oil(divided)
  • 1 tomatosliced
  • 1 lemonsliced
  • salt & pepperto taste
  • Trader Joes everyday seasoning
  • 4squares aluminum foil
Instructions
  1. Preheat oven to 400 degrees.
  2. Get 4 squares of aluminum foil and lay them out on a counter top or on a baking sheet.
  3. Use some of the oil and brush each piece of aluminum foil.
  4. Cut asparagus spears in half and divide amongst aluminum square foil packet.
  5. Add broccoli to each foil and season with salt and pepper.
  6. Place fillet on top of vegetables and season with more salt and pepper.
  7. Top with sliced lemon and tomato.
  8. Drizzle with a little of oil and add everyday seasoning or seasoning of your choice.
  9. Fold into packets. Start by bringing two ends together to tent over the ingredients and fold in tightly. Fold over, tightly, the two ends (2-3 times). Make sure it is sealed all around. You may add an additional piece of foil to ensure it is sealed.
  10. Place all four packet on a baking sheet and bake for 20 minutes.
  11. After it is done cooking, open the sides to let some steam escape. Empty contents onto a plate or eat right out of the packet!
