Ingredients
  • 20 datespitted
  • 1/4cup almondsraw
  • 1/2cup shredded coconutunsweetened
  • handful craisins
  • 1/4cup dark chocolate chips
  • 1scoop Vital Proteins Vanilla powderor any other protein powder of choice
  • 1tbsp coconut oil(as needed)
Instructions
  1. We’ll be using a food processor or blender to make the energy bites. Put the dates, almonds, coconut, craisins, dark chocolate chips and protein powder in there and process briefly.
  2. Add about 1/2 tbsp of the coconut oil, blending until color darkens and mixture can easily be clumped together. (add more oil, slowly, if needed)
  3. Once mixture is to the right consistency, use a cookie scooper or your hands to form 1- 1 1/2 inch sized balls.
  4. Place energy bites on a lined baking sheet and refrigerate for at least a half an hour to help form shape of bites.
  5. Store in an air tight container and refrigerate (or freeze) until ready to eat.
Recipe Notes

You can vary this recipe by adding other dried fruits, omitting chocolate chips, adding cocoa powder. Possibilities are endless with this recipe!
